Fettuccine Alfredo with Chianti Classico Capotondo

Fettuccine Alfredo:

Ingredients for 4 people:

For pasta

  • 300g Flour 00
  • 100g Semolina flour
  • 2 whole eggs
  • 4 egg yolks
  • 1 tablespoon of oil and salt

Combine all the ingredients until a homogeneous mixture is obtained and leave to rest in the refrigerator for 30 minutes before cutting to taste.

For the sauce

  • 120g of chicken
  • 50g Porcini mushrooms
  • 100g cherry tomatoes
  • 1 tablespoon of extra virgin olive oil

Brown the parts of chicken in a hot pan, after browning “fray” the same to the knife. Sauté the tomatoes already cut in half in a pan with a little cooking water and then add the chicken and mushrooms.

Combine the pasta in the sauce for a few minutes
